Black Bean Nachos with Green Chile Tomatillo Salsa

Nachos are a crowd pleaser, no matter what, but the star of this dish is the green chile tomatillo salsa. Our advice, make extra to have some leftover in your fridge!

Green Chile Tomatillo Salsa Ingredients:
  • 1 lb. tomatillos, husks removed
  • 1/2 medium white onion
  • 1/4 cup The Real Dill Green Chile Hot Sauce
  • 4 garlic cloves
  • 1 serrano pepper (optional, for more heat)
  • 1/2 cup cilantro
  • 1 lime, juiced
  • Salt
Nacho Ingredients:
  1. Tortilla chips
  2. 1 can black beans
  3. 1 cup frozen corn, heated
  4. 1/2 cup queso
  5. 1 tomato, diced
  6. Cilantro
Directions:
  1. Heat oven to 425 degrees F and line a baking sheet with parchment.
  2. Place tomatillos, onion, serrano (if using), and garlic cloves on the baking sheet and roast for 18-20 minutes.
  3. Remove from oven. Discard any stems from the tomatillos and serrano and add to a high powered blender with remaining salsa ingredients.
  4. Blend until mixture resembles a semi-chunky salsa. Season with salt to taste.
  5. Assemble your nachos by layering on all of your ingredients -- tortillas, black beans, corn, queso, tomato, salsa and finish with cilantro for garnish.
